No doubt, there are distinct types of lettuce that are commonly found in markets, each with its unique flavor profile and nutritional benefits. After reading this article, you can consider yourself a true Lettuce connoisseur! 

Iceberg

Iceberg is a type of lettuce that is often bought in the United States. It has a crispy texture and a mild, slightly sweet, fresh flavor.  Best of all, this lettuce is low in calories; a cup of shredded iceberg lettuce has about 5 calories. This variety also has a reliable source of vitamin K, folate, and potassium. 

Romaine

Romaine is another popular type of lettuce. It has a long shape and crisp white base which has a crunchy texture. Romaine lettuce has a slightly bitter taste and is often used in salads, sandwiches, and wraps. It is an excellent source of vitamins A, C, and K, as well as folate, Vitamin B6, and potassium. Romaine lettuce is the perfect lettuce base for your salads and sandwiches.

Butter

Butter lettuce, also known as butterhead is a type of lettuce that has a soft, buttery texture and a sweet, mild flavor. It is often used in salads and sandwiches and is an excellent source of vitamin A, Lutein, beta carotene, Vitamin K, and Folate. Radicchio

Radicchio stands out as the reddish burgundy colored lettuce. Although it looks similar to purple cabbage, it has a mildly bitter flavor. A cup has only 10 calories (about 1 minute of running). Its fat content is negligible. This beauty is packed with copper, iron, potassium, zinc and phosphorus. It is also a solid source of vitamin K. 

Boston

Boston lettuce, also known as Bibb lettuce, has a soft, buttery texture and a sweet, mild flavor. It is often used in salads and sandwiches and is an excellent source of vitamins A and K, as well as folate and potassium. It helps support eye health, bone health and helps support healthy digestion. 

Green Leaf

Green leaf lettuce has a soft texture and a pleasant flavor. It is commonly used in salads and is high in vitamins A and K, as well as folate and iron. If you are trying to incorporate very low calorie foods that are rich in antioxidants, such as lutein, look no further. Green leaf lettuce has you covered! 

Oak Leaf

Zeaxanthin and lutein, which are powerful antioxidants, work to reduce the risk of cardiovascular illness and some cancers. The antioxidants in this little one will keep your skin healthy and nourished from the inside.

The Amazing Asparagus 

Asparagus is first on the list. Asparagus is a delightful and adaptable vegetable that is brimming with vitamins A, C, and K, fiber, and folate. This is the ideal month to purchase it since it is best appreciated while it is still fresh. Grilled, roasted, sauteed, or even eaten raw in salads. Asparagus is the ideal summer vegetable to try in June.

Perfect Peas

When In season, as it is now, peas are sweet and tasty. They are a nutritious complement to any meal since they are full of fiber, protein, and important vitamins and minerals. They are a terrific addition to soups, stews, and salads and may be eaten raw or cooked.

Zesty Zucchini

With the skin on, a medium-sized cucumber has around 30 calories, 2 grams of fiber, 11% of the daily necessary amount of vitamin K, and 14% of the daily recommended amount of vitamin C. That’s not all, though, because Magnesium, Potassium, Manganese, and vitamin A are all present in cucumbers in trace amounts. Sunshine, warmth, and delectable seasonal foods are all abundant in June. We can’t help but get enthusiastic about all the fresh fruits and veggies that are going to be in season as the days become longer and the temperatures rise. Some of our favorites follow below: 

Strawberries

The classic fruit of summer because they are sweet, juicy, and flavorful to the brim. Strawberries will make you happy whether you eat them raw, bake them into a pie, or combine them into a smoothie. Additionally, they are a great source of vitamin C and antioxidants, so you can indulge guilt-free.

Cherries

If you’re looking for a snack that’s both sweet and tart, look no further than cherries. These little red gems are packed with flavor and nutrition, including fiber, vitamin C, and Potassium and if you’re feeling adventurous, try making your own cherry jam or pie. 

Blueberries

The blueberry is another berry that is in season in June. These small purple little fruits are a superfood for your health since they are brimming with antioxidants. Additionally, they taste great in muffins, pancakes, and yogurt parfaits. 

Peaches

To summarize, June offers a wide selection of tasty and healthy seasonal fruits. The many selections include beauties like strawberries,  cherries, blueberries, peaches, and watermelon. You will enjoy a variety of flavors and gain the health advantages of consuming fresh seasonal fruits by including them in your meals. What Does May Have in Store for Us??

2023 has been full of upheaval and unpredicted social, political, and economic changes.

Despite all the chaos around us, we have all made it to the fifth month of the year. This is a great month to pause and take stock of all we have to be grateful for and all of the possibilities that have yet to be realized.

One thing is certain, without good health, we cannot fully enjoy our lives.

Therefore, eating a well-balanced, plant-based diet should always be a top priority.

Seasonal Fruits and Veggies to Enjoy in May

According to LifeGate’s, Fruits and Vegetables in Season by Month: May, May is a great month for produce, as it bridges the gap between spring and summer. To be sure, the variety of tasty produce is impressive! These fruits and vegetables are an exceptional source of  vitamins A, B1, B2, and C, Manganese, Potassium, Iron, Calcium, and Phosphorous. They are also high in fiber, phenols,

Below is a short list of the top seasonal fruits and vegetables best enjoyed in the month of May.

1. Artichokes. Artichokes are a visually aesthetic addition to your dinner party menu. Best of all, they are so tasty and sure to impress!! They have a unique, nutty flavor and an almost meaty texture that makes them a great appetizer. They are also a fantastic addition to sauces. Artichokes go well with pasta and make for a delicious dip. Lastly, they are high in vitamin C, antioxidants, and fiber.

2. Asparagus. A favorite of exclusive restaurants, Asparagus is another lively addition to any dinner plate. When you serve Asparagus, you’ll be doing your friends and family a great favor. Not only are they delicious, but they are also a great low calorie and high fiber vegetable that can aid digestion and weight loss. May is a great month to try Asparagus in stir-fries, as a side dish, in casseroles, and in pasta dishes. Asparagus needs to be on everyone’s shopping list this month.

3. Peas. According to What’s in Season in May – Culinary Hill,  peas are a great May staple. In fact, if frozen, they can be enjoyed all year long. They tend to be at their peak this time of year. They are sweet and satisfying, without being too heavy, which makes them perfect for spring. They have a gorgeous green color and taste sweet, yet savory. Their texture makes them a great addition to soups, stews, and salads. Peas are also high in clean, plant-based protein, fiber, and vitamins A and C, which makes them a tasty health food!!

4. Pineapple. Pineapples have long been a staple for smoothies, detox juices, and popular cocktails. They possess a variety of potent health benefits.  They are sweet and juicy which makes them perfect for spring and summer. They have a sweet, yet tart flavor and their texture is soft and juicy. May is a great month to try them in salads and enjoy them as dessert. Eating Pineapple can help with hair and skin, improve digestion, reduce inflammation, and help ensure robust immune function. They have a high-water content that can help us avoid dehydration. They are rich in vitamins C, A B6, E and K. They are also a rich source of Manganese and Magnesium. Given all of this, Pineapples should become a tasty addition to your diet this month!!  

5. Radishes. Radishes are another very low calorie and refreshing vegetable that are perfect for this time of year! Some can have a slightly spicy flavor and may be an acquired taste. Still, they make a great addition to salads and to our beloved tacos! Like all vegetables in the cruciferous family, radishes have been shown to be associated with lowering the risk of some cancers. Radishes are rich in Zinc, Phosphorus, Potassium and flavonoids, which can help protect against cancer and heart disease. Radishes are full of water and have about 1 calorie each, making them a great weight loss food.

6. Rhubarb. Rhubarb is a unique and tangy vegetable that is often used in desserts and baked goods. It has a tart flavor and a fibrous texture that makes it a great addition to pies, tarts, and crumbles. Rhubarb is also high in fiber, vitamin C, and antioxidants, which can help improve digestion and boost immune function.

7. Strawberries. According to What’s in Season in May? (List of Fruits and Vegetables), strawberries are very popular this time of year. They are sweet, juicy, and full of amazing flavor. Strawberries are the base of many smoothies, salads, and desserts. No matter their color, strawberries are high in vitamin C, antioxidants, Manganese, and fiber. It’s no surprise they can help protect against cancer and heart disease. Best of all, 100 grams of strawberries yield only 32 calories!! Strawberries are a must in the month of May.

In general May is a great month for spending time outdoors and get togethers! You can keep your friends and family well fed this month by incorporating these seasonal fruits and veggies into your diet. There are countless ways to enjoy May’s seasonal produce!! Magnesium is an essential mineral that is important for many bodily functions, including muscle and nerve function, blood sugar regulation, and bone health. Unfortunately, due to our lifestyles and food choices, many of us don’t get enough magnesium in our diet leading to magnesium deficiency. Magnesium deficiency, also known as hypomagnesemia, can cause a range of symptoms that can affect your overall health and well-being. In this blog post we will discuss the symptoms of magnesium deficiency and most importantly, how to treat it.  

Tired, Weak, and Nauseous, Oh My!!!

Symptoms of Magnesium deficiency can cause a range of vague symptoms that can vary in severity. Some of the early signs of magnesium deficiency include malaise and fatigue, loss of appetite, muscle spasms, nausea, stiffness, and weakness. As the deficiency progresses, people may experience a more dramatic drop in energy levels, more frequent muscle cramps, abnormal heart rhythms, and if deficiency is severe enough, seizures. In severe cases, magnesium deficiency can lead to low calcium levels or hypocalcemia, low potassium levels or hypokalemia, and even hypoparathyroidism.

Causes of Magnesium Deficiency

Magnesium deficiency can have several etiologies, including inadequate dietary intake, gastrointestinal disorders, and certain medications. People who consume a diet high in processed foods and low in whole fresh, plant-based foods, such as fruits, vegetables, and whole grains, are at a higher risk of magnesium deficiency. Additionally, people with gastrointestinal disorders, such as Crohn’s disease and celiac disease, have a higher risk of magnesium deficiency due to malabsorption of nutrients through the digestive tract. Certain medications, such as diuretics, used to treat hypertension, heart failure and other diseases which can cause edema, and proton pump inhibitors, which are mainly used to treat gastritis, ulcers, and gastroesophageal reflux, can also cause magnesium deficiency.

How to Stop and Reverse Magnesium Deficiency

The treatment of magnesium deficiency depends on how severe the deficiency is, and a person’s other co-morbid conditions (other medical conditions). Mild magnesium deficiency can be treated by increasing magnesium intake through diet or magnesium supplementation. Foods that are high in magnesium include leafy green vegetables, nuts, seeds, whole grains, and legumes. Additionally, magnesium supplements are available in several forms, including magnesium oxide, magnesium citrate, and magnesium glycinate.

However, it is essential to consult a healthcare provider before starting magnesium supplements, since excessive magnesium intake can cause unintended adverse effects. Treatment in severe cases of magnesium deficiency will require intravenous magnesium to replete magnesium levels. Intravenous magnesium should be administered in settings where cardiac monitoring is available and is reserved for people with severe magnesium deficiency. 

When it Comes to Magnesium Deficiency, Prevention is in Your Refrigerator

Preventing magnesium deficiency involves consuming a balanced plant-based diet that includes magnesium-rich foods. The recommended daily intake of magnesium for adults is 400-420 mgs (about half the weight of a small paper clip) for men and 310-320 mg (about the weight of 10 grain of rice) for women. Don’t forget, reducing the intake of processed foods and increasing the intake of whole plant-based foods can help prevent magnesium deficiency. People with gastrointestinal disorders should work with their healthcare provider to manage and reduce their risk of nutrient malabsorption which can lead to deficiency.

You have more control over your health than you think.

Magnesium deficiency is a relatively common condition that can cause a range of symptoms that can affect your overall well-being and quality of life. It’s important to be on the lookout for early signs of magnesium deficiency. To review, the symptoms are fatigue, loss of appetite, muscle spasms, nausea, stiffness, and weakness. Preventing magnesium deficiency is easier than you think. However, it  involves some forethought on your part. Focus on eating and balanced plant-based diet that includes magnesium-rich foods and decrease your intake of processed foods. If you are experiencing the above signs and symptoms, it is important to talk with a healthcare provider to confirm the diagnosis, determine the underlying cause, and formulate an optimal care plan that works for you.

We’ve all heard it before, eat seasonally!! But why? The answer has multiple facets.

Eating this way, we can become more aware of what is fresh and what is not. The fact is, if we’re eating nectarines in December, chances are they were ripened artificially grown in another region of the world, shipped to your neck of the woods, stored in warehouses, then stored in stores, etc.… Not very appealing. Picking fruits and vegetables that are in season and grown where you reside has many benefits. It connects you to nature and helps you get fresh, naturally grown, and healthy produce. It can also stimulate your local economy.

“So How Do I Know What’s In Season?”

The Vitamin Channel’s got you covered! As a matter of fact, this being April, I am writing about seasonal produce and fruits pertaining to this month. We won’t stop there. This is The Vitamin Channel after all.

We will also briefly describe what makes the vegetable or fruit worth buying and eating.

Having said that, let’s see the goodies this month has for us. Keep this in mind as you read on. First and foremost is your safety.

Please note!!!!

April is a great month for fruits and vegetables! With spring in full swing, you are sure to find all kinds of delicious produce. From asparagus to zucchini, there is no shortage of options for those looking to eat healthier and support local agriculture. But let’s be honest, not all fruits and vegetables are created equal.

Exotic Merchandise

Fruits

1. Durian. This spiky, football-sized fruit is popular in Southeast Asia. Although quite malodorous, (yes, you read that right) many are obsessed with this fruit’s taste profile! I know some people that carry around Durian flavored candy when the real article is not available. Durian is high in fiber and is a good clean, vegan source of protein. It is also a rich source of potassium and vitamin C!

2. Jackfruit. This is a huge, prickly fruit that can weigh up to 100 pounds! Inside, you will find thousands of small, edible seeds that taste like a cross between a pineapple and a banana. But beware: jackfruit is notoriously difficult to cut open, and the sap inside the fruit can leave stains on your clothes! If you are feeling adventurous, try it. Just make sure you have a sharp knife and some spare clothing handy! 

Veggies

1. Kohlrabi. This interesting vegetable resembles a cross between a turnip and a UFO!! It is part of the cabbage family and has a mild, sweet flavor that’s perfect for salads.

April is the perfect month to incorporate some kohlrabi; you might be pleasantly surprised.

2. Fiddlehead Fern. These are the young, coiled fronds of a fern plant that grows in the wild. They have a delicate, nutty flavor that pairs well with butter and lemon. Please be aware: fiddleheads need to be cooked thoroughly before eating, or else they can cause food poisoning. So, embrace your adventurous side and forage for some fiddleheads this April. Just be sure you cook them completely before enjoying.  

The Tried and True Fruits and Veggies Available in April

April is also a great month to try, more typically available fruits and vegetables. There are plenty of delicious and healthy options that are in season this month. For example, asparagus is one of the most popular spring vegetables. It’s tender, flavorful, and goes well with just about anything. Plus, it’s packed with vitamins and minerals that are great for your body.

Another great fruit to try this April is the apricot. This small, orange fruit is sweet and juicy, with a slightly tart flavor that makes it perfect for pies, preserves, and snacking. It’s also a reliable source of fiber and vitamin C, which can help boost your immune system and aid in weight management.

Finally, we have the humble radish. These little root vegetables come in all shapes and sizes, from the mild and crunchy white radish to the spicy and colorful watermelon radish. They are a fantastic addition to salads and sandwiches, and they’re packed with antioxidants and other nutrients that can help keep you healthy.

This April is a great month to try a healthy, plant-based diet.

Remember to have fun with your food. After all, that is what makes food such a fun and interesting topic.  Whether you’re a die-hard durian fan or prefer something a little more mainstream, there’s no shortage of options to choose from this April. So why not take a trip to your local farmer’s market or grocery store and see what’s in season? Who knows, you might just discover a new favorite fruit or vegetable that you never would have tried otherwise.

In the end, the most important thing is to have fun and enjoy the process of exploring new foods and flavors. So, get out there and embrace the weird and wonderful world of fruits and vegetables, you never know what delicious surprises might be waiting for you!
